A Tale Of Two Fish

This week, we are having fish! Finally! From our regular guests to new guests, we understand that a three-course meal that includes two fish courses can be difficult and tricky to serve to a lot of people. 


So, we have come up with an easy menu. A lot of it can be prepared ahead of time; the only thing that will take a bit of time is the risotto. So come with us on this Experience and surprise yourself and your guests at the next dinner party.

Wine Selection

Matua rightfully boasts of being the pioneer in producing Sauvignon Blanc in New Zealand, and for good reason. This wine stands out remarkably, making an exceptional first impression—a rarity among Sauvignon Blancs. 


Upon the first sip, the palate is greeted with vibrant notes of passionfruit, followed by hints of grapefruit and lime, culminating in a delicate peach finish. It impeccably balances the richness of the velouté while harmonizing with the subtle flavours of caviar and cod. The wine's slight minerality provides a refreshing touch, cleansing the palate between bites. Our aim was to select a wine that enhances the dish and remains enjoyable throughout the meal, and Matua Sauvignon Blanc accomplishes just that. 


It even has a little sticker that goes from grey to blue at the right temperature! Cheers!

Is it surprising that we're suggesting a Malbec to go with fish? Well, our guests certainly thought so! However, a few factors led to this unconventional decision. Firstly, we rarely have the opportunity to pair red wine with fish, so we jumped at the chance to explore this unique combination. Additionally, with our recipe featuring salmon coated in spices, the richness of the fish and the bold flavours can easily hold their own against a robust red wine. 


Enter La Mascota Malbec from the esteemed Argentine winery. This 2020 vintage offers soft tannins that beautifully complement the dish's spiciness without overwhelming it or clashing with the delicate truffle oil in the salad. While the wine initially presents strong notes of plum and blackberry, a sip reveals the subtle spice undertones that harmonize with the salmon's flavours, creating a delightful surprise for the palate.
