Birthday Roast

Two chicken recipes in a row was not the original plan, but a roast still earns its place. This one was built as a birthday roast: familiar enough to feel relaxed, but with truffle mash, grilled broccoli and bacon-fried Brussels sprouts to make it worth sitting down for.


The useful part is timing. Get the chicken in first, make the mash while it rests, then finish the greens just before serving. That keeps the meal generous without turning the kitchen into a pressure test.


The music moved away from the low-tempo sets of the previous weeks. Consciousness is melodic techno with enough familiar names to work even for people who do not usually listen to the genre.

After trying several Italian and French options, we went with Penfolds Koonunga Hill Shiraz Cabernet 2020.


The blackberry, plum, spice and oak worked with the roast chicken, bacon and truffle mash. The acidity helped with the broccoli and Brussels sprouts, while the body of the wine gave the plate enough weight without needing to decant it.
