Birthday Roast

This week, we realised we've got two chicken recipes in a row, but who doesn't like a Sunday roast? 


This is no ordinary roast chicken. It has three sides, so we are cooking it as a main course. We also wanted to give you a recipe that's easy enough to make on any day of the week but good enough to impress everyone at a dinner party.


After a couple of weeks of low-tempo mixes, we've mixed a set full of vibrant melodic techno numbers. While they are melodic techno remixes, many of them are familiar names, such as Dua Lipa, Depeche Mode, and Hayden James. Even for the uninitiated to the genre of techno, this is an enjoyable set. Turn up the volume and enjoy the mix.

Roast Chicken

Roast chicken served with truffle mashed potatoes, grilled broccoli and Brussels sprouts fried with bacon.

This roast chicken deserves a bold companion; after trying several Italian and French wines, we decided to go with Penfold's Koonunga Hill Shiraz Cabernet from 2020. 


Its rich blackberry and plum flavours tango with the savoury chicken, while its spice and oak add complexity. Truffle whispers in the mash find echoes in the wine's chocolate notes, and the smoky bacon of the Brussels sprouts harmonizes with the peppery spice. Grilled broccoli's bitterness gets tamed by the wine's acidity, creating a delightful balance.


Full-bodied yet smooth, this Shiraz Cabernet elevates each bite, transforming the meal into a symphony of taste. It doesn't need to be decanted, but we found that it elevated chocolate flavours! Cheers!
