Chilling with Pasta
This was one of the smaller Experiences: pasta, a drink, and a mix for an evening when nobody wanted a complicated service.
The dish is a lemony chicken pasta with olives, capers, garlic, mint and Parmesan. It usually takes us about an hour including the marinating time, though recipe timing always depends on who is cooking and how many conversations happen in between.
The set, Woodland Oracle, starts gently and builds slowly. It is the sort of mix we would play while cooking, pouring a drink and letting the evening settle into its own pace.

Lemony Chicken Pasta
Fettuccine in an olive, caper, garlic, mint, and Parmesan sauce served with chicken breasts marinated in lemon and baked in the oven.
Wine Selection

Paddle Creek Sauvignon Blanc made sense here because the dish is built around lemon, capers, olives, mint and Parmesan.
The wine's citrus and acidity keep the sauce bright, while its herbaceous notes sit naturally with the mint and garlic. It is a clean pairing rather than a heavy one: enough freshness for the chicken, enough fruit for the salt and richness of the pasta.
