Lemony Chicken Pasta

This pasta dish is your weeknight saviour or the ideal solution for those lazy weekends when cooking feels like too much effort. Drawing inspiration from the Mediterranean, it's also a delightful option for a leisurely brunch on a summer day. With just around six simple ingredients, you can have it ready to serve in under an hour. Enjoy the taste of the Mediterranean with minimal fuss and maximum flavour.

Pasta served with oven roasted chicken marinated in lemon and garlic. With a sauce made from olives, capers, parmesan cheese and mint

Ingredients

2 organic chicken breasts (150g each)

1 lemon (after jucing the lemon cut it into 1cm slices and set aside)

3 tbsp olive oil

3 cloves of garlic (minced)

20 green olives (pitted)

1 tbsp capers

handful of fresh mint leaves

40g parmesan

salt and pepper (of course)

140g fettuccine pasta

Method

Step 1

Marinate the chicken: Begin by flattening the thickest part of the chicken to approximately 2cm thickness. In a bowl, combine lemon juice, 2 tablespoons of olive oil, 2 minced garlic cloves, and a pinch of salt and pepper (note: you will season it again before cooking). Marinate the chicken for about 20 minutes.


Step 2

Prepare the sauce: Halve the olives and thinly chop them. Roughly chop the capers and mint. Mix these chopped ingredients in a bowl with minced garlic, grated Parmesan, and the remaining olive oil. Aim for a consistency similar to pesto. Season with salt and pepper.


Step 3

Cook the chicken: Preheat the oven to 220˚C. Place two slices of lemon per chicken breast to prevent them from touching the dish. Pour some of the marinade into the baking dish. Season the chicken breasts and arrange them on top of the lemon slices. Cook for about 20 minutes. If available, use the top grill function for the last few minutes to brown the top of the chicken.


Step 4

Boil the pasta: This takes only a few minutes. So, start boiling the pasta when the chicken is out of the oven and resting.


Step 5

Finish the dish: Once the pasta is cooked, drain it and add the sauce. Toss well to ensure every strand of pasta is coated. Plate the pasta and serve with sliced chicken arranged on top or side, as desired.
